Truffles are found only in certain parts of the world, and can be harvested only during the Autumn months, and only under carefully controlled conditions. Our Truffles are found deep in the oak woods of Istria County in Croatia, close to neighboring Italy and Slovenia. These truffles are revered not only for their fine quality, but also for the care taken in blending them with other gourmet ingredients including olives, olive oil, and prized boletus and champignon mushrooms.

RECIPE – Mashed Potatoes with Black Truffles

40 grams preserved black truffles, black truffle olive oil, 1 kilogram potatoes, 100 grams butter, salt, pepper.

Slice the cleaned and peeled potatoes (equal slices) and boil them in salted water until soft. Drain, mash, and add salt, butter, chopped black truffles, and a few drops of black truffle olive oil. Serve immediately as either a side or main dish.

RECIPE - Fish Filets with Black Truffles

2 fresh fish filets, 25 grams black truffles, 40 g butter, white wine, black truffle flavored olive oil, salt, white pepper, flour

Sprinkle filets with white pepper and salt, roll into flour and fry from both sides in 20 g butter. Fry the roughly grated truffles in the remaining butter and truffle-flavored olive oil. Pour this sauce on the fish, followed by the white wine. Simmer for a few moments on low flame. Add dash of truffle flavored olive oil and serve.
